Ingredients:
- Vegetable oil for frying
- ¹⁄3 cup hot pepper sauce
- ²⁄3 cup water
- 1 cup all-purpose flour
- 2¹⁄2 teaspoons salt
- 4 teaspoons cayenne pepper
- 1 teaspoon coarse-ground black pepper
- 1 teaspoon onion powder
- ¹⁄2 teaspoon paprika
- ¹⁄8 teaspoon garlic powder
- 4 boneless, skinless chicken breasts
- 4 plain hamburger buns
- 8 teaspoons mayonnaise
- 4 tomato slices
- 4 lettuce leaves
- Preheat oil in a deep fryer to 350°F.
- Mix the pepper sauce and water in a small bowl.
- In a different bowl, combine the flour, salt, cayenne pepper, black pepper, onion powder, paprika, and garlic powder.
- Pound each of the chicken pieces until about ³⁄8" thick. Trim them if necessary to help them fit on the bun.
- Coat each piece of chicken with the flour and roll it in the watered-down pepper sauce. Coat it in the flour
- mixture again and set it aside. Repeat for other fillets.
- Fry the chicken for 10 minutes, or until they are brown and crispy. Remove to paper towels to drain.
- Prepare sandwiches by grilling the hamburger buns in a hot fry pan. Spread 2 teaspoons of mayonnaise on each bun.
- Build the sandwiches by adding tomato, lettuce, and chicken.
